Lobster Bisque

Lobster Bisque – 4 Servings

This is a rich and creamy soup to start your meal. It can also hold it’s own as entrée with extra chunks of lobster added and served with a tossed garden salad and crusty bread!

Ingredients

½ Pound – Steamed or boiled Maine lobster meat

2 Tbsp – Chopped celery

2 Tbsp – Chopped onion

2 Tbsp – Chopped carrot

1/4 cup – Chopped mushrooms

3 Tbsp – Butter

16 oz – Homemade or prepared chicken broth

Salt – To taste

1/8 Tsp – Cayenne pepper

½ cup – Dry white wine

1½ cups – Half-and-half

Directions

Melt butter over low heat in a large saucepan or dutch oven. Add chopped vegetables. Cook until soft.

Add the broth, cayenne, and salt to taste. Bring to boil and turn down to simmer for about 10 minutes.

Place one-quarter of lobster meat, the hot vegetable and broth mix into a blender. Blend until smooth.

Return the mixture to the pan.

Add the remaining lobster meat plus the wine and half-and-half and stir over low heat for about 30 minutes until the bisque thickens. Ladle into small bowls and serve.
