Oven-Baked Sea Bass

Oven-Baked Sea Bass – Serves 4

Ingredients

2 Tbsp extra virgin olive oil

3 medium cloves garlic, minced

1 1/4 tsp sea salt

1 1/2 tsp coarse ground black pepper

2/3 c white wine (optional)

2 lbs. sea bass fillets (cleaned and scaled)

1 Tbsp flat leaf parsley, chopped

1 Tbsp fresh oregano

1 1/4 tsp dried thyme or 3 1/2 tsp of fresh thyme

4 sprigs of thyme for garnish

Directions

Preheat oven to 450°

Place sea bass fillets in a glass or ceramic baking dish. Mix olive oil, garlic, salt, and pepper and rub mixture on fish. Pour wine over fish and bake uncovered for 15 minutes. Mix parsley, thyme, and oregano, and sprinkle over fillets. Bake an additional 5 minutes until fish flakes easily at the thickest part. Drizzle pan juices over fillets and serve garnished with sprigs of thyme and lemon wedges.
